I posted this simple recipe last year on my facebook page, but realized that I had not given it a permanent home here at the blog. This is my absolute favorite way to prepare okra! It’s easy and fast to make, versatile due to the variety of herbs and spices you can used based on your personal preference, and best of all, it’s a snap to clean up afterwards. No messy oil to filter and store- and with less oil an no batter, it’s a healthier alternative to frying. Okra normally comes into production around August here in Texas, but I still have some in my freezer to hold me over.

Instead of frying, I decided to bake some okra. I slice okra as usual, added some olive oil and seasoning (garlic salt this time), spread it on a baking sheet, and baked at 375 for 15 – 20 minutes until lightly brown. A nice alternative..
